Background
In 1990, the Kedem family planted vineyards in and around our home at Moshav Kidmat Tsvi to establish the Assaf Winery.
We began producing wine in 1997. In 2011, we produced about 43,000 bottles of our award-winning wines. We grow seven different types of grapes from dark Cabernets to blushing Zinfandels. Assaf Kedem, our vintner and master winemaker, personally tends to every vineyard.
We have new stainless steel tanks (vats) and equipment, including a crusher, extractor, bottle filler, and auto-labeler — the “last word” in the wine industry. In addition, our state-of-the-art on-site laboratory provides inspection services for the Assaf Winery and other boutique wineries in the area. Our barrel room contains more than 150 barrels where the wine ages, matures, and takes on its wonderful taste and fragrance

The Enchantment of Assaf Wines
We believe the quality of our wine begins in the vineyard. The way the vines grow; the altitude, and the cool, dry climate of the Golan combined with its rich volcanic soil — the terroir. All these factors taken together directly influences the quality of our grapes.
From the vineyard to the bottle: The production of the wine is imbued with experience — and love — and therein lies the magic and the secret of Assaf wines. Its the thread connecting all aspects of our business — from cultivating the vineyards, blending the grape varieties, bottling, and marketing — a true, sincere love of the land and a love of what we do. This passion goes into every bottle of our exceptional wine.
Tourism and Visitor Center
In our visitor center, you can truly experience the Assaf Winery. The tour begins with an explanation of the entire production process and ends with, of course, a tasting — and an opportunity to purchase. Tours are available in Hebrew, English, and Portuguese.
The Assaf Winery is located in Moshav Kidmat Tsvi. Once past the moshav’s gate, turn right and follow the signs to the Assaf Winery.

Vision, Dreams, Momentum, Fulfillment
The Assaf Winery and the Kedem family recently started a new undertaking: a “wine village” — Domaine Assaf — the first of its kind in Israel. The project will include the winery, our newly renovated visitors’ center, guest cabins, and the Adika Restaurant from Chef Adi Kedem Alon. And, of course, the vineyards, the spectacular skies of the Golan Heights, and its breathtaking scenery. There’s nowhere like it.
Our vision and our dreams are taking shape! Renovations are underway. The first stage (making improvements to the winery and building our visitors’ center) will be completed in spring 2012.
